Title: Biomaterials obtained from fishery industry waste: Chemical characterization and evaluation of their effect on fish fillets.

Description: In recent years, the Brazilian fishery industry has experienced significant growth. However, along with increased production, there has been a rise in the amount of waste generated during fish processing. Therefore, the use of raw materials that were traditionally inadequately disposed of, causing environmental harm, to recover bioactive molecules presents an interesting field of study. These actions contribute to the sustainability of extractive fishing and aquaculture agribusiness and provide biomaterials with a wide range of applications in various areas of biological research. From residues of industrial fish and crustacean processing, biomaterials can be obtained that can be used as food coatings. In this sense, the approved project aims to obtain and characterize biomaterials extracted from industry-generated waste and evaluate the effect of applying these biomaterials as coatings on chilled and frozen fish fillets. This evaluation will involve measuring the microbiological and physicochemical properties of the fish during storage. Additionally, we will test the incorporation of natural antioxidants and antimicrobials into the filmogenic matrix and consequently assess their effectiveness. During the project’s duration, the exchange of researchers between the two countries is planned.
